Recipe Series: Mema's Strawberry Cake

The recipe I am sharing is from my late mother-in-law, Rose....also known as Mema. She loved to cook and bake and she loved to feed her family -- this is what brought her the most joy. She had a famous Strawberry Cake that was made for all special occasions -- birthdays, Christmas, Easter, Thanksgiving, family gatherings and more. One of my favorite things about it, is that it was just the right size to be my childrens' 1st Birthday cake -- you know the one -- the one that is placed in front of them for them to dig into with their fingers, whole hands, face, whatever! A delicious photo op! So without further ado, here is Mema's Strawerry Cake recipe!
 
Mema's Strawberry Cake
Cake Ingredients:
- 1 box of Duncan Hines Deluxe White Cake Mix
- 4 eggs 
- 1/3 cup water
- 1/2 cup crushed strawberries (see notes for frozen vs fresh)
- 1 cup oil
- 1 small box of Cherry Jello
- 3 T self rising flour
 
Icing: 
- 1 box (16 oz)10x powdered sugar
- 1/2 c crushed strawberries (drained)
- 1 stick butter
 
*Mema's tip:  If you use fresh strawberries, make sure to mash well and add sugar to desired sweetness.  Frozen strawberries work well for cake and icing.
 
Cake:
Mix together cake mix, eggs, water, strawberries, oil, jello and flour. Pour into two 9 inch cake pans, a 9 x 13 pan or cupcake non stick pans -- use cooking spray.
 
Bake 30-40 minutes at 350 degrees. Insert toothpick until it comes out clean. Let cool before frosting.
 
Icing: 
Mix together powdered sugar, strawberries and butter. Add small amounts of juice to the powdered sugar to get the smooth consistency you like and spread onto cake/cupcakes.
